Gesunder Stollen – healthy ‚Stollen’

In den meisten Blogs, die ich gerne lese, wird eifrig gebacken und dekoriert. Und so will ich auch meinen Stollen vorstellen. Dieser ist aus einem Uraltheft der Brigitte. Und da er so gesund ist, hat ihn der Wiesenmanager immer links liegen gelassen. Letztes Jahr hat er dann entdeckt, daß er doch nicht so schlecht ist. Somit ist der Stollen spätestens zum zweiten Advent verspeist. 
In the blogs I like to read there is a lot of decoration and baking. And so I will also write about my Stollen. The receipt is from a very old magazine of ‘Brigitte’ (a quite famous magazine in German speaking countries). Because it is very healthy the meadow-manager always turned his back on it. But last year he discovered that it tastes not so bad after all. Therefore not later then the second advent it is eaten.


 

 
 
 
 
Und hier ist das Rezept
Roggenstollen mit Aprikosen

getrocknete Aprikosen

Apfelsaft

Roggenschrot (Typ1800)

Butter

Weizenmehl (Typ 550)

Mehl zum ausrollen
·         Aprikosen klein schneiden und über Nacht in Apfelsaft quellen lassen.
·         Roggenschrot mit 125 gr weicher Butter zu einem Teig verkneten. Beiseite stellen.·         Weizenmehl, Trockenhefe, Salz, abgeriebene Zitronenschale und Zimt in einer Schüssel mischen.
·         Honig, Ei, restliche weiche Butter (75 gr), 1 TL Zitronensaft und Milch zugeben
·         Alles mit dem Knethaken zu einem glatten Teig verkneten.
·         Zugedeckt an einen warmen Ort gehen lassen, bis sich der Teig etwa verdoppelt hat.
·         Walnüsse grob hacken
·         Den aufgegangen Hefeteig und den Roggenschrotteig auf  die bemehlte  Arbeitsfläche geben und mit den Händen gründlich verkneten, bis ein gleichmäßiger, elastischer Teig entstanden ist.
·         Nach und nach die Walnüsse und Aprikosen einkneten.
·         Den Teig zu Rechteck ausrollen (ca. 30 cm x 25 cm) 
·         Marzipan zwischen Klarsichtfolien zu einem kleineren Rechteck ausrollen  und auf den Stollenteig legen
·         Die eine Teigseite zu dreiviertel über die andere schlagen und mit der Handkante zu der typischen Stollenform nachformen
·         Stollen nochmals ca. 1 Stunde gehen lassen.
·         Bei 175 Grad /Gas Stufe 2  ca. 1 Stunde backen
·         Zitronensaft und Puderzucker glatt rühren und den Stollen  damit bestreichen.  Ich streiche den Zitronensaft auf den  heißen Stollen und dann wird der Puderzucker darauf gesiebt.

marzipan paste (I prefer 250 gr)

some flour for the worktop
 
·         Cut the dried apricots in small pieces and let it soak in apple juice  over night.
·         Knead together the whole grain rye with 125 gr soft butter for a pastry. Put aside.
·         Mix wheat flour, dry yeast, salt, grated lemon rind and cinnamon in a bowl.
·         Add honey, egg, remaining soft butter (75 gr), 1 teaspoon lemon juice and milk.   
·         Knead all with the dough hook to a smooth pastry.
·         Cover the bowl and at a warm place allow the yeast dough to rise until it has approx. doubled.  
·         Chop the walnuts roughly.
·         Give the puffed yeast dough and the whole grain rye on a floured worktop and knead with the hand, until the dough is smooth and elastic.  
·         Knead in the walnuts and apricots bit by bit.
·         Roll the pastry in a rectangle (approx. 30 cm x 25 cm) 
·         Roll the marzipan between transparent films in a smaller rectangle and put it on the pastry.
·         Put ¾ of the dough over the other and form the typical form of a stollen with the side of your hand. 
·         Prove the stollen again for approx. 1 hour.
·         Bake for approx. 1 hour at 175 degree/gas degree 2
·         Mix lemon juice with icing sugar smooth and brush it on the stollen while still warm. (I brush the lemon juice and then sieve the icing sugar on the stollen while still warm.

Adventsstimmung im Cottage-Garden – Adventstimmung in Cottage-Garden

Im Blog Vintage Rose  wurde zur Adventsstimmung eingeladen. Den Blog kenne ich schon längere Zeit – da habe ich noch nicht geblogt. Und letztes Jahr haben wir dann den Garten der Besitzer im Rahmen der ‚offenen Gartenpforte im Hunsrück’ entdeckt. Leider wusste ich nicht mehr, wo denn dieser Garten liegt, aber da mir Belinda die Adresse per Email mitgeteilt hat, lag es nur an uns, hinzufahren. Es war sehr stürmisch und ich hatte wirklich Angst, daß vielleicht umgefallene Baumstämme unseren Ausflug behindern könnten. Aber wir sind gut angekommen und herzlich begrüßt worden. Der Stollen war übrigens vorzüglich  - das hatte schon Mops Nelson bewiesen. Und das neues ‚Häuschen’ ist mir auch gleich aufgefallen. Nur schade, daß es so windig und kühl war. Aber die Sonne hat sich am Nachmittag dann doch noch blicken lassen. 
Der Ausflug zu der Adventsstimmung hat sich auf alle Fälle gelohnt.
In the blog Vintage Rose there was an invitation for ‘Adventsstimmung’. I know this blog since a long time – at this time I didn’t blog. In summer last year we discovered the garden of the blog-owner in context with the event ‘open gardens in Hunsrueck”. Unfortunately I forgot where the garden is, but Belinda was so nice to email the address. So it was our part to travel there. It was quite stormy and I was really frighten, that we had to interrupt the journey because of fallen trees.  But we arrived healthy and had a warm welcome. The stollen tasted exquisite – this demonstrated mops Nelson already. And a newly built hut I realised at once. Too bad, that it was quite breezy and chilly. But the sun was shining at least in the afternoon. In any case  the trip to the ‘Adventsstimmung’  was worth wile.

Garten im November – Garden in November

Heute kam die neue Ausgabe der Zeitung ‚Gartenträume’. Die  gezeigten Gärten schauen im Winter immer toll aus. Immer mit Schnee und Raureif überzogen.  Nicht wie unser Garten im Winter – üblicherweise im Regen oder  bei trüben Wetter.
Today I received the new edition of the magazine ‘Gartenträume”. The showed gardens always look great in wintertime. Always covered with frost and snow. Not like our garden in wintertime – usually it is raining or we have sulky weather.
Aber manchmal gibt einige Lichtpunkte.
But there are sometimes some highlights.
 
Diese Schneeglöckchen kommen schon einige Jahre immer im November. Die Gärtnerin ist auch immer gespannt, ob sie wohl kommen. Sie haben sich auch schon vermehrt.  
These snowdrops appear in November since some years. The head gardener is always curious about it. They also propagate slowly.


Dieses hier ist eine Diva (kaum  zu sehen, der weiße Fleck). Schon seit gut zwei Jahren in der Erde, geruht es, sich mit einer Blüte zu zeigen. Dabei singt es nichtmal das englische Weihnachtslied  ‚Three ships’ obwohl es unter ‚Three ships’ geführt wird.  
And this one is a diva (barley visible, the white spot). After at least two years, it decided to appear with one stalk. And by the way not even once it sings the Christmas carol ‘Three ships’ – although it is called ‘Three ships’.


nochmals Seligenstadt – Seligenstadt again


Ich weiß, langsam aber sicher wird es langweilig nur von Seligenstadt zu lesen. Dabei wollte ich nur im Blumengeschäft ‚Tausendschön’ den Adventskranz besorgen.
I know slowly but surely it is boring only to read about Seligenstadt. Thereby I only wanted to buy an Advent wreath in the flower shop ‘Tausendschön’. 



Die Vögel fliegen übrigens im Geschäft frei herum.
By the way, the birds are flying free in the shop.
 







Dann natürlich noch einen Abstecher zu den Rosigen Zeiten’. Hier wurde auch etwas Geld hinterlassen.
Naturally we visited ‘Rosige Zeiten’ and left some money there.

und anschließend den Main aufwärts zum Wasserschlösschen. Die Gänse haben Martini überlebt.
And afterwards we made a walk the river Main up to the little moat. The geese survived Martinmas (in Germany and Austria they are usually eaten on the 11th of November (the saint’s day of Martin).
 


Dieser Beitrag ist etwas spät, aber Google und ich haben uns nicht verstanden. Ich war – und bin -  so blöd und wusste nicht, daß Google die Bilder unter Picasa in der normalen Größe speichert. So war auf einmal war der Speicher voll. Ich habe mich dann schlau gemacht, was ich machen sollte, aber das verkleinern war so umständlich, vor allem weil Google ständig sich nicht mehr gerührt hat. In der Verzweiflung bin ich jetzt auf Google+ gegangen – Facebook habe ich immer gescheut – nun bin ich selber im sozialen Netz gefangen.  Und ich habe noch immer Probleme.  
This post is a little bit late, but Google and I had some problems in understanding. I was - and I am – so stupid and didn’t realize, that Google files the pictures in Picasa in full size. And at once, the store was full. After reading about this problem in some blogs what I should do, I tried to minimize. But this was so complicated; especially Google always ended and didn’t move. In my sheer despair I signed on Google+ - after avoiding Facebook – now I am  prisoner of the social net Google+. And I have still problems.
